2 large tomato
1 tbsp evoo
1 small red onion chopped
1 clove garlic
1/2 tsp ground coriander
1/8 tsp salt
2 drops hot sauce
6 oz fat free ground turkey
1 cup cooked brown rice
3 cups baby spinach
1/4 cup crumbled blue cheese

Directions:
Directions:
Cut tops of tomatoes and scoop out pulp and seeds. Chop pulp and place in sieve over bowl. Set aside. Cut tomatoes in half.
Heat oil cook onion and add garlic, coriander, salt and hot pepper sauce and cook stirring one minute.
Add turkey and cook stir in chopped tomato, rice and spinach and cook 3 minutes. Remove from heat and stir in feta. Stuff tomatoes and serve.
