1 (3 to 5 lb.) chuck roast
black pepper
1 pkg. dry onion soup mix
1 can cream of mushroom soup
1/2 can beer (can substitute white wine)



Directions:
Directions:
Spray a heavy (club aluminum) Dutch oven with Pam. Rinse and dry roast; sprinkle with black pepper and place in pan. Sprinkle dry onion soup mix on roast. Whisk mushroom soup and beer together. Pour over roast. Cover and bake at 300 degrees for approximately 1 hour per pound for a 3 lb. roast. Add about 15 minutes for each additional pound. Turn the roast once during cooking time and add water if the gravy becomes too thick.
