1 lb. dried blackeyed peas
6 slices salt pork
1 small onion, sliced
bacon drippings
salt, pepper, garlic powder, cayenne pepper

Directions:
Directions:
Wash and soak peas in water for 1 hour. Brown salt pork; add onion and saute. Add 7 cups water and bring to a boil; add peas. Season to taste with salt, pepper, garlic powder, cayenne pepper, and bacon drippings. Simmer about 2 hours or until done, being careful not to overcook. (Bayou Magic Cajun Black Eye Peas are good and include a seasoning packet. Brookshire’s in Shreveport carries them.)
