2 lbs cooked chicken, cubed or 1 lb chicken and 1 lb cooked ground turkey
1 onion chopped
1/2 green pepper chopped
1 28 oz can whole tomatoes
1 14 oz can stewed tomatoes
2 15 oz cans tomato sauce
3 15 oz cans great northern beans (white beans)
1 15 oz can dark red kidney beans
2 cubes chicken broth
1 tsp cumin
1 tsp salt
1/2 tsp pepper
2 chipolte peppers chopped
1 tsp adobo sauce from chipolte pepper can
2 Tbsp chili powder to start then add more to taste

Cook onion and green pepper in drizzle of olive oil until tender. Combine all ingredients in large pot. Heat over medium heat until simmering, stirring occasionally. Reduce heat to med-low. Cover and simmer about 3 hours, stirring occasionally until whole tomatoes start to break down. If desired top with some sour cream and shredded cheddar cheese when serving.
