3 TBSP Flour
3 TBSP vegetable oil
1 bell pepper chopped
1 onion chopped
2 ribs celery, chopped
1 TBSP tomato paste
1 tsp salt
1 tsp red pepper (Cayenne)
1 tsp garlic powder
3 cups chicken broth
1 cup chopped cooked chicken
1 lb sliced andouille or kielbasa sausage
1 lb cleaned crawfish or shrimp
2 TBSP Filet Gumbo

Cook the oil and flour in a hot skillet, stirring constantly to make a dark roux (chocolate colored). Have the vegetables previously chopped and ready to add to cool the roux. Saute the vegetables in the roux along with the spices until soft. Add the tomato paste and broth and simmer slowly for an hour. Add the chicken and sausage and simmer for about another half hour. Cook the rice if you want to serve over rice. Add the seafood 7 minutes before rice is finished and mix in the filet gumbo. Enjoy

2 TBSP Tony Chachere's or your favorite Cajun seasoning can be substituted. I find overly seasoned sausage will dominate the cajun flavor and radically change the flavor of the gumbo. Left over smoked chicken works really well here.
