1-1/2 c. water
1/2# shrimp, fresh, unpeeled
6 water chestnuts, whole
2 T. green onion tops, chopped
1/2 t. salt
1/2 t. sugar
1 egg white
11 slices white bread

Directions:
Directions:
Bring water to a boil; add shrimp, and cook 3 to 5 mins. Drain. Rinse with cold water. Chill. Peel and devein shrimp.
In a food processor, add shrimp, water chestnuts, onion tops, salt, and sugar. Process for 30 seconds or until finely ground.
Bet egg white (at room temperature) until stiff peaks form; fold into the shrimp mixture.
Trim crust from bread; cut each slice into 4 triangles. Broil 6 inches from heat 1 to 2 mins. Cool. Spread shrimp mixture on bread sections; bake at 425º for 5 mins. or until lightly browned.
