1 lb. beef steak, any tender cut
1 clove garlic, minced
Soy sauce, sugar and sesame oil, to taste
1 lb. shiitake mushrooms, sliced or other type mushroom
2 carrots sticks, cut julienne
1 onion, cut in half and sliced vertically into longer slices, not round
1 bunch spinach, leaves only
1/2 bag buckwheat noodles

Cut beef into strips. Marinate in garlic, soy sauce and sugar. Saute mushrooms, carrots, onions and spinach to al dente; add a dash of salt and oil. Boil buckwheat noodles for 5-7 minutes; following instructions on package. Run cold water on noodles, drain and cut with scissors to desired length. Saute noodles on low heat for 5 minutes with dab of soy sauce and oil. Cook beef strips. In a large bowl, mix all ingredients. Season with soy sauce, sugar and sesame oil to taste. Serve warm.
