1/3 cup popping corn
small brown bag, about 7" wide
scotch tape
Extra virgin olive oil , butter substitute like Smart Balance or Butter(optional or to taste)
salt (optional or to taste)

Directions:
Place popcorn in bag. Fold top of bag down about 1 1/2", and fold again. Secure fold with 2 pieces of tape. Position each piece of tape about 1" from side of bag. Make bag as flat as possible. Place flat bag on its side in microwave, and cook on high for about 2 1/2 - 5 minutes depending on your microwave. Stop when popping slows. Carefully open bag to allow hot steam to escape. Place popcorn in bowl, drizzle with extra virgin olive oil, and sprinkle with salt.

Involving your children: Children can measure popcorn and pour into bag and seal it. Once popcorn is cooked children can pour in pre-measured oil and salt.

This recipe is economical (I purchase my popping corn in bulk), environmentally friendly (I use the same bag over and over), healthy (olive oil is a healthy fat), and very easy (takes a little over 2 minutes, with minimal clean-up)
