1 pound ground meat
1 medium size onion
4 ounces chopped green chiles
2 tbsp red chile powder (mild or hot)
1 clove garlic, minced
1/2 pound grated sharp cheese (I use more)
3 or 4 corn tortillas, torn into pieces (tortilla chips are fine)
3 1/2 cups canned white hominy (or yellow), with liquid
2 green onions, chopped (optional)

Directions:
Directions:
Brown meat. Add chopped onion and cook until onion is translucent. Add the green chiles, ground red chile, garlic, 1/2 of the grated cheese. the tortilla pieces and hominy. Mix well.

Place the mixture in a greased 2 quart casserole, bake at 350º for 45 minutes. Add remaining cheese and top with green onion. Heat until cheese melts.

If you use the microwave, you can have dinner on the table in 15 minutes.
Brown meat, put into a microwave proof dish, add remaining ingredients, heat in microwave on high for 8 minutes.

May also be prepared in a crock pot. Brown meat, toss all ingrediets into crockpot and cook until hot. It will hold on warm a long time.

For all recipes, I add fresh cilantro (to taste), grated cheese and fresh onions. The amount is up to you.
