2 cups grated Zucchini
4 cups flour
1 tsp baking powder
1 1/2 tsp baking soda
1 1/2 cups sugar
1 tsp salt
1 pkge lemon instant pudding mix
4 eggs
1 tsp lemon extract
Juice and grated rind of 1 lemon
1 1/4 cup oil
1 1/4 cup milk
1/2 cup poppy seeds

Directions:
Directions:
Measure dry ingredients into bowl. Mix well In separate bowl, beat sugar and eggs together. Add remaining liquid ingredients.; \pour into centre of dry ingredients. Add zucchini, grated rind and poppy seed. Stir until moistened. Bake muffins at 325º for 30 minutes or pour batter into 3 greased loaf pans and bake for 1 hour
