Ingredients:  
Ingredients:  
1 medium eggplant, chunked (don't remove skin)
1 large red onion, chunked
2 red bell peppers, chunked
8 cloves of garlic, hole, not crushed
olive oil
salt and pepper
1 T tomato paste
pita chips

Directions:
Directions:
Place all ingredients on a large baking sheet. Generously coat with olive oil, salt, and pepper. Roast in preheated oven @ 400 degrees for 40 minutes. Turn vegetables after 20 minutes. Remove from oven and let cool slightly (just so you can touch them)
Mix in a food processor with 1 T tomato paste.

Serve with Pita chips. We like the ones with Sea Salt.
