1/2 cup olive oil
2 large cloves garlic, minced
2 onions, coarsely chopped
4 lbs. course ground chili meat (round or chuck 3/4-inch grind)
3 Tbsp. chili powder
1 tsp. oregano
1 tsp. coriander
1 tsp. salt
1 tsp.. cumin powder
1 tsp. pepper
8-oz. tomato sauce
4 cups liquid (water, beef broth, and/or beer)
1/2 block bittersweet chocolate
1/2 cup masa harina

Heat olive oil in large cast-iron pot or dutch oven. Add meat, onions, garlic, and seasonings. Stir to brown meat and blend. Cover and cook on low for one hour, stirring occasionally. Add tomato sauce and water/broth/beer; continue cooking for another 2 hours, stirring occasionally. Add chocolate during the last half hour. Skim off grease. Make a slurry of masa with water and stir in to thicken and provide texture (will also absorb any remaining grease).

Serve with the accompaniments of your choice: pinto beans; grated cheese; chopped raw onions, jalapeno pepper, bell pepper, tomatoes; Fritos; oyster crackers; rice; sour cream.

Reheats well. For "four-alarm" chili, add more cumin and/or chili powder. NEVER put beans in the chili pot! Cook them separately. Those who like beans with their chili should add them as an accompaniment.
