3 Tbsp. olive oil
1 small onion, chopped fine
3 medium yellow crookneck squash (1-1/2 lbs.), chopped medium
2 garlic cloves, minced
2 Tbsp. minced fresh parsley
salt and pepper

Directions:
Directions:
Heat oil in 12-inch skillet over medium-high heat until shimmering. Add the onion and cook until beginning to soften (3 min.). Add the squash and cook until spotty brown and tender (8 min.).

Clear the center of the pan and add the garlic. Cook, mashing into the pan with spoon, about 15 seconds. Stir the garlic into the squash; stir in parsley and salt and pepper to taste.
