For Sauce:
¾ cup heavy mayo
¼ cup sour cream
2 T Horseradish (I use hot)
1 minced garlic clove
1/4 cup chopped green onions
1 T FRESH lemon juice, not bottled
Salt and freshly ground pepper to taste

For Zucchini:
3 medium/large zucchinis
Mix together 1 cup each:
Parmesan cheese
Italian bread crumbs
course cornmeal

2 eggs and 1 cup milk

For Sauce:
Blend together, cover and refrigerate while making zucchini.

For Zucchini:
Wash and dry zucchinis
Cut it into fourths lengthwise, then in half so that you have 8 pieces per zucchini OR if you like it thinner, just cut it into 4 thin slices lengthwise and then in half
In another bowl, beat 2 eggs and mix w/1 cup milk
Dip zucchini in egg mixture, then roll in dry mixture-lay aside on cooking sheet
Heat frying pan w/about ¼ inches of canola oil
Fry each piece on medium heat until golden brown on each side, let drain on paper towels until all is fried.
Serve immediately with the horseradish sauce.
