1 1/2 c. graham cracker crumbs
1/3 c. sugar
1/2 c. melted butter
2 beaten eggs
3/4 c. sugar
8 oz. cream cheese, softened
2 c. pumpkin (not pie mix)
1/2 c. sugar
3 egg yolks
1/2 c. milk
1/2 tsp. salt
1 tbsp. cinnamon
1 envelope plain gelatin
1/4 c. cool water
3 egg whites
1/4 c. sugar
Container of Cool Whip, thawed
Chopped pecans

Directions:

Mix together graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into a 9 x 13 inch pan. Mix together beaten eggs, 3/4 cup sugar, and cream cheese. Pour over graham cracker crust. Bake for 20 minutes at 350º. Mix together the pumpkin, 1/2 cup sugar, egg yolks, milk, salt, and cinnamon. Cook over medium heat until thick, about 20 minutes. Remove from heat and add 1 envelope plain gelatin which has been dissolved in 1/4 cup of cool water. Cool.

Beat egg whites and 1/4 cup sugar until stiff. Fold into pumpkin mixture. Pour over cooled graham cracker crust. Refrigerate until set and then top with Cool Whip. Sprinkle with chopped pecans.
