6 potatoes
2 c. grated cheddar cheese
2 c. cubed ham (I use Von's or Safeway's Honey Ham)
1/4 c. melted butter
3/4 c. chopped green onions, green and white parts
1 1/2 c. sour cream (I use light sour cream.)
1/2 lb. sliced mushrooms (optional)
salt and pepper to taste

Directions:

Boil the whole potatoes until you can easily insert a fork into them. Drain hot water and run cold water onto the potatoes. Let them cool. Peel the potatoes and either grate them or cube them, depending on your preference.

Add all of the other ingredients. It should be fairly moist when you mix it. If it seems dry, add more sour cream.

Cook in a 9 by 13 inch pan, 350º oven, until bubbly, about 30 min.
I often double this recipe. When I do, I cook it longer.
