1/3 c. water
2 envelopes(1/4oz. each) unflavored gelatin
1 1/2 c. sugar
1/4 c. water
1/4 c. corn syrup
pinch of salt
1/2 tsp. vanilla
powdered sugar (to dust counter top)
colored sugar (to dip marshmallows in)

Coat a 8x8 pan with cooking spray. Pour 1/3 c. water into a bowl and sprinkle gelatin into water.
In Saucepan, mix sugar, 1/4 c. water, corn syrup and salt. Stir over heat until dissolved. Stop stirring and heat to a boil. Carefully pour hot mixture over gelatin, then beat mixture with electric mixer on high speed until glossy, smooth and fluffy (about 12 minutes). Mix in vanilla extract and then scrape the whole mixture into the greased pan.
Let the marshmallows sit until dry to the touch (about 2 hours). Sprinkle a cutting board or counter top with powdered sugar and invert the pan onto it.
Cut marshmallows into squares or cut out with 2 inch metal cookie cutters. Dip marshmallows into colored sugar or dust them with powdered sugar.
