Blueberry Muffins Recipe

1/3 c. sugar
1/4 c. butter (softened)
1 egg
2 1/3 c. flour
4 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 tsp. vanilla
1 1/2 c. blueberries

Streusel Topping:
1/2 c. sugar
1/2 c. flour
1/2 tsp. cinnamon
1/4 c. butter
Directions:
Directions:
Cream sugar and butter well. Add egg and mix well. Sift dry ingredients together. Alternate dry ingredients and milk. Stir in vanilla. Fold in blueberries. Pour mixture into greased (or lined with paper cups) cupcake/muffin pan. Fill each cup 3/4 full. Sprinkle streusel on top. Place pan in center of oven that has been preheated to 375º and bake for 25-30 minutes.

If you don't want a streusel topping you can leave it off or you can roll tops of muffins into sugar while still warm (let them cool just a little while, or the muffins will fall apart).
