4 cups diced rutabaga
1/2 tsp. grated fresh ginger
1 clove garlic, minced
2 tbsp. butter
2 tbsp. flour
2 cups milk
salt & pepper, to taste
3 tbsp. fresh white bread crumbs
3 tbsp. grated Swiss cheese

Directions:
Directions:
Steam diced rutabaga with ginger and garlic over 1 inch of water, covered, for about 10 minutes, until almost tender. Boil down liquid to 1/4 cup. Melt butter in 2-quart pan; blend in flour and let bubble about 2 minutes without coloring. Remove from heat, beat in hot vegetable liquid and milk. Simmer for 2 minutes, Season to taste. Fold in rutabaga; pour into 6-cup baking dish. Sprinkle crumbs, then cheese on top. Bake at 325º for 1 1/2 hours.

Needs long slow baking for vegetables to mellow in sauce. Best if browned and caramelized.
