4 medium-sized potatoes
2 onions, thinly sliced
1 medium zucchini
4-5 tomatoes
3 carrots, pared
1 cup Rhine wine
salt & pepper, to taste
1/4 cup butter, melted
1 cup small bread crumbs
2 cups grated Cheddar cheese

Directions:
Directions:
Slice potatoes thinly and spread over bottom of ungreased casserole. Place onions in rings over potatoes. Cut zucchini in half, remove seeds and cut in chunks. Spread over previous layer. Add layer of tomatoes in small chunks, then sliced carrots. Pour wine over entire casserole; add salt & pepper. Cover and bake for 1 hour at 350º or until vegetables are soft, but crisp. Mix bread crumbs with melted butter until all are coated. Sprinkle grated cheese and bread crumbs on top of casserole. Return to oven and bake uncovered for another 15 minutes.
