4 quarts water
1/4 cup EVOO
4 cloves garlic, finely minced
3/4 cup dry white wine
3 eggs
1 c grated parmesan
2 tbsp salt
1# spaghetti
1 1/2 tsp freshly ground pepper
pinch of red pepper flake (optional)

Bring H2O in large pot to a rolling boil. While water heating, heat olive oil over medium heat. Saute garlic - 1-2 min. until golden. Slowly pour wine and cook until slightly reduced - 5/7 min. Remove from heat. Keep warm. Small bowl- beat eggs/cheese together. When water reaches boil, add 1 tblsp. salt and pasta and stir. Stir occasionally until al dente - about 10 min. Using tongs, transfer pasta to skillet. Toss the pasta gently to coat with wine/garlic. Add egg/cheese mixture to skillet and remaining salt, blk. pepper and crushed red pepper. Toss gently until evenly coated. Serve in warm pasta bowl and drool like a pig Ryan!
