2 lb. split boneless skinless breasts
1/4 tsp. salt
2 T. oil
2 T. flour
1/8 tsp. cinnamon
Dash of ginger
1/4 tsp. salt
1 1/2 c. orange juice
1/3 c. almonds, sliced
1/3 c. seedless raisins

Directions:
Directions:
Preheat oven to 350º. Season the chicken pieces with 1/4 tsp. salt. In a large skillet, lightly brown the chicken in oil. Arrange chicken in a flat baking dish. Add flour, cinnamon, ginger and 1/4 tsp. salt to the drippings in the skillet to make a smooth paste Add orange juice, almonds and raisins to the skillet; stir until thickened and boiling. Pour mixture over the chicken. Cover and bake for 25 minutes. Then uncover and continue baking another 30 minutes.
