Fiesta Salad and Guacamole Recipe

Fiesta Salad:
2 lbs lean ground beef
1 can ranch style beans
2 cups cooked white rice (or 2 bags of instant white rice)
1/2 head of lettuce -chopped
2 tomatoes -diced
2 cups shredded cheese (mild cheddar or any variation)
1 bag of Frito chips
salt and pepper
Sour cream and/or Picante Sauce optional

Guacamole:
3 large ripe avocados
1 small tomato -finely chopped
1 dill pickle -finely chopped (keep 2 tbsp juice)
1/2 small onion finely chopped (optional)
1/4 cup cilantro finely chopped (optional)
1 jalapeņo seeded, finely chopped (optional)
lemon
salt and pepper

Fiesta Salad:
Boil rice as directed. Cook ground beef thoroughly, add salt and pepper to taste. Add can of ranch style beans and simmer for 5 minutes.

Guacamole:
Cut avocados length wise and remove seed. Spoon out inside of avocados into a bowl. Add chopped tomato, pickle and any combination of onion, cilantro or jalapeņo. Mix well using a fork to break down avocados. Add salt and pepper to taste and pickle juice. Squeeze in lemon juice once complete.

Serving:
Serve in layers as follows: place some Frito chips on plate, then white rice, next is meat mixture, top with lettuce, tomatoes and cheese. Finish with sour cream, guacamole and/or picante sauce on top.
