1 Cup all purpose flour
3 tbsp. butter, cold
3 tbsp. margarine, cold
1 tbsp. granulated sugar

Filling:
3/4 cup granulated sugar
6 tbsp. cornstarch
2 cups boiling water
2 tsp. grated orange rind
1 tsp. grated lemon rind
1 tbsp. butter
1/4 cup lemon juice
1/4 cup orange juice
3 eggs, separated
1 tsp. lemon juice
6 tbsp. granulated sugar

1. Place flour in mixing bowl Remove 3 tablespoons and place in a cup with 2 tablespoons water. Stir to make a paste.

2. Into remaining flour cut the butter, margarine, and sugar until mixture resembles coarse crumbs. stir in paste form into dough.

3. roll out. place in a 9in pie plate. prick

4. bake at 400º F for 12 mins

5. In a saucepan, combine the sugar and cornstarch. Add the boiling water and rinds. Stir and cook until thickened. Simmer for 10 minutes. Stir in the butter.

6. In a bowl, beat together the juices and egg yolks. Slowly stir the cooked mixture into the egg mixture. Pour into the pie shell.

7. Bake at 400ºF for 10 min.

8. Beat the egg whites and lemon juice until soft peaks form. Slowly add sugar. Beat until very stiff. Spread over filling

9. Bake at 325ºF for 18 minutes until golden. Cool on rack
