6 eggs
1 1/2 sugar
1 cup margarine, melted and cooled
2 T vanilla or anise extract
3 1/2 cups flour
4 tsp baking powder

Directions:
Directions:
Beat the eggs and sugar together until thickened and a light yellow. Add the cooled melted margarine and vanilla or anise. Add the flour and baking powder, mix until smooth. Place 1 heaping tablesoon of the mix on preheated pizzelle iron or as directed on your pizzelle iron. Cook until lightly browned, about 30 seconds. Make a test cookie, add more flour if needed. You can also use 1 1/2 tsp of anise oil instead of extract.
