1 2/3 c. sugar
3/4 c. + 1 tbsp. unsalted butter (melted and cooled)
2 tbsp. water
2 large eggs
1 tsp. vanilla extract
1 tsp. almond extract
1 1/3 c. all-purpose flour
3/4 c. cocoa powder + 1 tbsp
1/2 tsp. baking powder
1/4 tsp. salt
1 square bittersweet Baker's Chocolate
1 square semi-sweet Baker's Chocolate
1/4 c. almonds (sliced, slivered or chopped)

Preheat oven to 350º. Chop the Baker's Chocolate, place into a bowl with the almonds, toss with 1 tablespoon cocoa and set aside. In a large bowl combine the sugar, melted butter and water. Mix to combine. Add the eggs and extracts and stir well. In a separate bowl stir together the flour, 3/4 cup cocoa, baking powder and salt. Add this to the sugar mixture being sure to combine well. Gently stir in the chopped chocolate and almonds. Spread into a greased 13 x 9 inch baking pan and bake for 18 to 25 minutes or until a wooden toothpick inserted into the center comes out slightly sticky. Allow to cool completely in the pan on a wire rack and cut into squares.
*Variations:
-Substitute about 1/2 c. of dried cherries (coarsely chopped) instead of almonds.
-Substitute mint extract for almond extract and add about 1/2 c. of your favorite chocolate-mint candy.
-Omit the almond extract, substitute chopped walnuts for the almonds and add about 1 c. mini marshmallows.

A couple of teaspoons of espresso powder will really add a nice flavor to the chocolate.
