2 large onions (about 2 lbs.)
vegetable cooking spray
2 tsp. vegetable oil
1 1/3 cups Marsala wine
1 tsp. dried whole thyme
2 1/2 lbs. medium-sized red potatoes
2 tbsp. flour
salt & pepper, to taste
1/2 cup skim milk
2 tbsp. grated Parmesan cheese

Cut each onion in half, then each half in 1/8-inch slices across. Coat a large frying pan with cooking spray; add oil and place over medium heat until hot. Add onion slices and saute for 10 minutes. Add wine, and cook for 20 minutes or until liquid is nearly absorbed, stirring frequently. Remove from heat; add thyme. Peel potatoes and slice 1/8-inch thick. Cook in boiling water for 8 minutes or until tender crisp; drain. Pour cold water over potatoes and drain well. Arrange 1/3 of the potato slices in 9x13 baking dish coated with cooking spray; spoon 1/2 of the onions over potato slices. Repeat, ending with potato slices. Mix flour, salt and milk together. Pour over potatoes. Sprinkle with Parmesan cheese. Cover with foil, vented with 3 (1-inch) slits. Bake at 350º for 45 minutes. Uncover and bake for an additional 15 minutes.
