1 pound venison sausage
1 tbsp butter
1 cup or so of milk or cream
2 tbsp flour

Brown sausage and DO NOT drain grease, we need it.
set sausage aside for now
add 1 tbsp of butter to the grease (there probably isn't very much) then add tbsp of flour and mix well.
This is our roux, should be a yellowish brown
slowly add milk and continue to mix. As the mixture sits on low heat (3 or 4) it will get thicker. Slowly add milk until you reach the desired consistency. The extra flour is in case you get it too thin and want to thicken it up. Once you get the gravy to your liking add pepper to taste and then the sausage, let simmer for about 10 minutes and you are ready to serve over biscuits.
