3/4 cup whole wheat flour
3/4 cup blue corn meal
1 1/2 tsp baking powder
1 cup milk (soy, rice or almond)
1/4 cup nonfat yogurt
2 TBSP unsweetened berry concentrate
1 tsp vanilla
2 egg whites, beaten stiffly

Directions:
Directions:
Combine and thoroughly mix dry ingredients in a large mixing bowl. In a separate bowl, combine the milk, yogurt, berry concentrate and vanilla.

Add wet ingredients to dry and mix completely with as few strokes as possible. Fold the beaten egg whites gently into the batter.

Spoon 1/4 cup of batter on to a heated griddle (oiled or use non-stick). Cook until golden grown. Serve with sliced fresh fruit.

Yields: 12 pancakes
