2 1/2 cups flour
2/3 cup baking cocoa
2 cups sugar (substitute with sucanat)
1/2 tsp sea salt
6 TBS apple sauce
2 1/4 cups water
1 tsp vanilla
2 TBS rice vinegar
2 tsp baking soda

Directions:
Directions:
In large bowl, whisk dry ingredients together. In separate bowl combine liquid ingredients. Stir liquid into dry ingredients until blended. Fill non stick sprayed muffin pans.

Bake in pre-heated oven 375º for 25 minutes. Remove from pan and place on a rack to cool.

Make 18 cupcakes.
Frost with Ganache Frosting (see next recipe)
