4-6 firm medium tomatoes
2 t. olive oil
1 onion, diced fine
2 garlic cloves, chopped
1 t. basil
1 T Italian seasoning
1/4 c. shredded mozzerella
1/3 c. parmesan cheese
2 T. breadcrumbs
1 pkg. frozen spinach, defrosted, drained
1 beaten egg

Preheat oven to 350 ,. Cut off 1/4 inch of tomato tops. Scoop out meat and seeds - be careful to keep tomato shell shape. Put tomato shells in greased (butter or olive oil) pan.
Chop and reserve tomato bits. In olive oil saute onion, garlic, basil, and spinach.
Remove from pan and mix in parmesan, mozzarella, and beaten egg. Stuff tomato shells. Sprinkle with seasoned bread crumbs. Sprinkle olive oil atop the tomatoes shells.
Bake 20-30 minutes. Broil low - 1 minute to brown tops.
Good hot or cold!
