4-6 bone-in pork chops
2 T salt
1 T onion powder
1 tsp. black pepper
1 tsp. garlic powder
1/4 tsp. celery seed
1/4 tsp. cayenne pepper
1/4 tsp. paprika
1/4 c cider vinegar
1/4 c maple syrup
3-4 T lime juice
2 T ketchup
2 T Dijon mustard
dash Worcestershire sauce
dash Tabasco

Directions:

Preheat the grill to high heat.

Combine salt, onion powder, black pepper, garlic powder, celery seed, cayenne pepper, and paprika. Sprinkle the mixture onto the chops and gently press it into the chops (don't rub).

Combine vinegar, syrup, lime juice, ketchup, mustard, Worcestershire, and Tabasco.

Baste chops with vinegar mixture and grill over the high heat for about three minutes per side, basting before turning them. Then turn the heat down to medium and grill for five more minutes per side, basting occasionally. Remove chops from the grill onto a serving platter (internal temperature should read 145ºF) and serve.

Our family does a fun activity during the summer called "Kid in the Kitchen," where each week, one child selects, shops for, and cooks all the food for the Friday night dinner. This past summer, I had the first turn of the vacation, and didn't realize it until Wednesday. Frantically, I went to the Food Network website and managed to find this amazing recipe. (However, I did some modifying to come up with the lime juice. Oh yeah - MY idea.) The pork chops turned out very tender and flavorful. They make an EXCELLENT summer entree. A Friday evening well spent! Enjoy!
