1 green onion, finely cut.
2 tbsp. (30 ml) butter
2 tbsp. (30 ml) flour
2 cups (500 ml) milk
2 cups (500ml) macaroni
1/2 cup (125 ml) melting cheese
(type cheez wizz)


3/4 cup (175 ml) orange cheddar
3/4 cup (175 ml) old white cheddar
1 tsp. (5ml) paprika
1 pinch ground cayenne pepper (optional)

Directions:
Directions:
In a medium pan, saute the onion in butter. Add the flour and stir for about one minute. Then add the milk and stir until it thickens.

At the same time cook the pasta in a big amount of salted boiling water. Cook until al dente. Then drain them and add them to the sauce.

Add the cheeses, the paprika and the cayenne pepper, stir until the cheese is melted.

Add salt and pepper to taste, stir again and serve.

You can replace the onion with about the same amount of green onions, this is highly recommended.

The Cheez wizz can also be replaced by mozzarella, or you can split the cheez wizz with mozzarella if you wish.

Also I recommend to double the recipe, some extra is always nice, and it goes away fast.

This recipe will make you truly enjoy nice tasting mac and cheese and make you never want eat the stuff you usually buy ever again.
