Crust:
1 cup flour
1/3 cup sugar
½ tsp vanilla
½ cup well chilled butter, cut into small pieces

Cream Cheese Filling:
Two 8 oz pkgs cream cheese, room temp
½ cup sugar
2 eggs
1 tsp vanilla

Apple Topping:
¼ cup sugar
½ tsp cinnamon
2 large green apples, peeled, cored, and very thinly sliced
½ tsp vanilla
1/3 cup coarsely chopped walnuts

Directions:
Directions:
Preheat oven to 350. Combine flour, sugar, and vanilla. Cut in butter until mixture resembles coarse meal. Press into bottom and sides of 10 inch springform pan. Bake until golden, about 5 minutes. (It will look a bit soft.) Increase oven to 450.º
Beat cream cheese, sugar, and vanilla with electric mixer until smooth. Add and beat eggs one at a time. Spoon into crust.
Mix apples, sugar, cinnamon, vanilla, and nuts. Individually place apples over cream cheese mixture, making a double spiral around the top. Sprinkle remaining nut mixture on top. Bake 15 minutes. Reduce the oven to 350 and continue baking 45 minutes, until tester comes out clean. Cool completely. Refrigerate. Then let stand 30 minutes at room temperature before serving.
