2 large boneless, skinless chicken breasts
1/2 c. flour
4 Tbsp. olive oil
Kosher salt and ground black pepper
2 Tbsp. unsalted butter
1 tsp. shallots, chopped
1/2 c. brandy
2/3 c. chicken stock
2 Tbsp. lemon juice
1/2 tsp. sugar
1/2 c. heavy cream
Fresh lemon slices
Garnish: Chopped Italian parsley

Preheat oven to 350º. Place chicken between plastic wrap and pound to 1/2" thickness. Flour chicken and shake off excess flour. Heat large saute pan over medium heat. Add olive oil and chicken, season with salt and pepper. Brown chicken, about 3-4 minutes per side. Remove chicken from pan,place in oven-safe dish and finish cooking in oven for 6-8 minutes. Keep warm until ready to serve.

To make sauce, add butter and shallots to saute pan and saute about 30 seconds. Deglaze pan with brandy off the burner, as it will flame up. Add chicken stock, lemon, sugar, and cream and reduce on medium heat until thickened. Season to taste with salt and pepper. Add lemon slices to sauce to warm. If the sauce thickens too much, add a little more chicken stock.

To serve, place chicken on warm plates and top with sauce and lemon slices. Garnish with chopped parsley.
