12 oz. fresh wild salmon (Sockeye or King)
1/2 c. white wine
1 tsp. chopped shallots
2 tsp. lemon juice
2 tsp. capers
1/2 c. marinated artichokes
2 Tbsp. cold unsalted butter
Kosher salt and ground black pepper
Garnish: Chopped Italian parsley

Preheat grill until hot. Grill salmon for 3-5 minutes, depending on the thickness of the salmon. Make quarter turn and grill for 2-4 minutes more. Turn over and grill another 2-4 minutes. Remove salmon from grill and keep warm.

Heat small saute pan over medium heat. Add white wine, shallots, lemon juice, capers, and artichokes. Simmer until reduced to almost dry. Turn off heat; add cod butter, salt and pepper.

To serve, place salmon on warm plates. Pour sauce over salmon and sprinkle with chopped parsley.
