1 pkg. frozen spinach
1 cup sour cream
1 cup mayonnaise
1 pk. Knorr's Vegetable Soup mix
garlic powder, to taste
1 green or red pepper, diced
1 can water chestnuts, chopped
5 scallions, chopped (can substitute with 1 leek or finely chopped onion)
1 tsp. lemon juice (optional)

Directions:

Defrost and drain spinach of all water. (Tip: place spinach in a paper towel and squeeze -- it doesn't stick to the paper towel!) Mix together sour cream, mayonnaise, Vegetable Soup mix, and garlic. Add pepper, water chestnuts and scallions. Add spinach and mix well. Refrigerate until serving.

Serving suggestion: Hollow out a long loaf of French bread. Cut up hollowed-out bread into bite-sized pieces. Fill hollow with dip. Serve with bread chunks, crackers or raw vegetables.
