1 1/2 - 2 lbs. boneless, skinless chicken breasts, cut in large chunks
1/2 cup chopped onions
1 c. chopped celery
1 10 3/4 oz. can condensed cream of chicken or cream of mushroom soup, undiluted
1 12oz. jar chicken gravy
1/4 t. poultry seasoning
1/2 t. dried thyme
black pepper to taste
2 c. frozen mixed vegetables, thawed
6 - 8 biscuits

Directions:
Directions:
Layer chicken breasts with onion and celery. Combine soup and gravy w/poultry seasoning, thyme, and pepper. Pour over the chicken. Cover and cook on low for 5 - 6 hours. Add vegetables, turn to high and continue cooking 20 - 30 minutes, until vegetables are tender.

Meanwhile, cook biscuits according to directions. Split biscuit and spoon chicken and vegetable over bottom half. Cover with top of biscuit.

(I cook the onions before adding them to the pot. In lieu of poultry seasoning I used garlic powder and a dash of Lawry's. It was delish!
