2 Tbsp. unsalted butter
16 oz. heavy cream
1 c. Gorgonzola cheese crumbles
Kosher salt and ground black pepper
12 oz. potato gnocchi
Garnish: Gorgonzola cheese crumbles and chopped Italian parsley

Directions:
In a medium saute pan over meduim heat, add butter and cream and cook until reduced by half. Add Gorgonzola and cook until thickened. Seaton with salt and pepper and keep warm. (If the sauce becomes too thick, add a little of the pasta water.)

In a large pot of salted boiling water, cook gnocchi for 2-3 minutes or until they float to top. Drain gnocchi.

Toss gnocchi in sauce and pour into warm pasta bowls. Garnish with gorgonzola crumbles and chopped parsley.
