White cake Mix
3/4 c Fresh Grated Coconut
--------Orange Filling------------
1 c Orange Juice
2/3 c Sugar
3 Tbsp Cornstarch
1/4 c Water
Dash of Salt
1 tsp Butter
1 tsp Lemon Juice
1/4 tsp Grated Orange Rind
-------Fluffy Frosting-------------
2 Unbeaten Egg Whites
1 c Sugar
1/4 tsp Cream of Tartar
1/3 c Water
1 tsp Vanilla

Directions:
Directions:
Mix cake by directions on box. Add coconut to the batter and mix well. Bake in 2 - 9" Round pans as directed on box. COOL CAKE COMPLETELY!
----------------Filling-----------------
Heat OJ and 1/3 c sugar in saucepan and stir until sugar is dissolved. Blend cornstarch with water, then add to hot mixture and cook until clear, stirring constantly. Remove from heat. Add 1/3 c sugar, salt, butter, lemon juice, and orange rind. Blend well. Cool completely before spreading between layers.
----------Frosting-----------
Combine all ingredients except vanilla in top of double boiler. Place over boiling water and heat constantly until frosting hold peaks for 7 to 10 minutes. Remove and add vanilla. Cover cake completely, then sprinkle and pat grated coconut over the top and sides of cake.
