40 grams (1 1/2 oz.) fresh yeast
50 ml (1 3/4 oz.) water
50 ml (1 3/4 oz.) room temperature milk
1 tsp. sugar
1/2 tsp. salt
800 grams (1 3/4 lb) flour
50 ml (1 3/4 oz) oil
200 ml (0.85 C) water
200 ml (0.85 C) milk
1 Tbsp. sugar
2 Tbsp. melted butter
1 egg yolk
1/2 Tbsp. oil
1 egg yolk
optional sesame seeds

Filling:
150 gram (5.3 oz) cream cheese
1 tsp. sour cream
1 small egg

Directions:
Directions:
For starter, dissolve 40 grams fresh yeast in 50 ml water, 50 ml room temperature milk, 1 tsp. sugar, and 1/2 tsp. salt in a 0.5 liter cup. Leave in a warm place to rise until it fills the cup completely. For the dough, sift the 800 grams of flour, 50 ml of oil, 200 ml of water, 200 ml milk, and 1 Tbsp. of sugar together. Knead it until smooth. Leave dough covered in a warm place to double it's volume. For filling, mix all ingredients together, or use any jam, nutella, or nothing. When the dough has risen, knead it a little more, then form a ball. Cut into 8 equal pieces. Knead each ball a bit and form it into another ball. Flatten each ball to a 5 mm thickness. Make a mixture of 2 T melted butter and 1 egg yolk. Take four flattened dough pieces and divide mixture evenly on top of dough pieces. Spread it but not completely to the edges. Use the rest of the dough pieces to cover the dough with the spread on it. Flatten the pieces again and cut them into 8 triangles. Place 1 tsp of filling on each triangle. Fold into a croissant. Grease the baking sheet. Mix 1 egg yolk and 1/2 tsp oil and spread it over the kiflice. If used cream cheese filling, top with sesame seeds. Bake for 15 minutes in a preheated oven at 392º F or 200º C or until golden.
