12 hickory smoked bacon slices, finely chopped
2 medium sweet onions, finely chopped
3/4 lb. smoked ham, chopped
9 cups chicken broth
3 lbs. fresh collards, trimmed and washed
1/3 cup apple cider vinegar
1 tsp. salt
1 tsp. pepper

Directions:
Directions:
Cook bacon in a large stockpot until almost crisp. Add onion and saute 7 minutes, then add ham, garlic and saute 1 minute. Stir into broth and add all remaining ingredients. Cook 2 hours or until desired tenderness.

Note: Add 1 washed unshelled pecan to pot to prevent odor from collards while cooking.
