2 c. cake flour
4 eggs, separated
1/2 t. salt
1 T. sugar
1 t. baking powder
1/4 c. shortening, melted
2 c. scant milk

Directions:
Beat egg yolks with sugar. In another bowl, sift dry ingredients and add yolks alternating with milk. Fold in beaten egg whites. (egg whites should be semi-stiff) Grease an ebleskiver pan well with butter or Pam. When hot, pour batter in just to the top of pan holes. When dry around the edges, flip ball by stabbing the dry part on one side and quickly turn over into pan holes. Cook like this for about 2-3 mins. Serve with butter, pancake syrup, jam, jelly or meats.

Very traditional Danish breakfast. Pancake balls are unique because by turning them in the pan you create a well or pocket into the pancake ball where you can fill with lots of yummy things.
