1 c. onion, chopped
1/2 c. tomato, fresh, diced
2 cloves garlic, minced
1/2 t. oregano
1/2 t. salt
1/4 t. pepper
2 T. aji
1/2 t. cumin
1/4 c. parsley
1 T. shortening
3 T. tomato paste
8 oz. frozen peas
1 stewing chicken (3-5#)

Directions:
Directions:
Saute onion in shortening in a Dutch oven. Add aji stir to mix. Add tomato, garlic, oregano, cumin, parsley, tomato paste, salt and pepper to taste. Add chicken and just enough broth to cover chicken. Cook for 4 hours on simmer. Remove chicken and debone. Add back chicken, add peas, heat and serve over rice or potatoes and green beans.

The chicken can be substituted with meatballs (albondigas) or chuck roast (falsa conejo). I make all three and have a feast for all my friends!
