Rub:
1/4 c. firmly packed brown sugar
1/4 c. sweet paprika
3 Tbsp. black pepper
3 Tbsp. coarse salt
1 Tbsp. hickory smoked salt or more coarse salt
2 tsp. garlic powder
2 tsp. onion powder
2 tsp. celery seeds
1 tsp. cayenne pepper

Pork shoulder
Olive oil

Directions:
Directions:
Mix all ingredients in a bowl.
Coat pork with olive oil (this will help the rub stick).
Rub pork with mixture and let set over night. (you don't have to let set over night if you are short on time) Start grill on 225º. Put pork on and get internal temperature of pork around 70º. (approx 1 hour) Switch grill to smoke and let smoke until pork temperature gets to around 170º. Be sure to spritz pork with white grape juice every hour. When pork is 170º or close, put pork in an aluminum pan with a small pan of white grape juice and cover with foil. Turn grill to 225º and continue to cook until pork temperature reaches 190º. Let pork set around 30 minutes before pulling.
