14 graham cracker squares
1/4 cup butter
1 tablespoon sugar
1 8oz package cream cheese, softened
1 cup whipping cream
1/4 cup sugar
1 teaspoon vanilla
1 11oz can of mandarin orange sections
1/4 cup apricot or peach preserves

Directions:
Directions:
1. Put graham crackers in a plastic bag, seal and crush with a rolling pin. You should have 1 cup of fine crumbs.

2. Heat butter in a saucepan over low heat until melted. Remove from heat.

3. Add graham cracker crumbs and 1 tablespoon of sugar and stir to mix. Spread crumb mixture evenly over the bottom of a springform pan, pressing with your hand to make the crust even. Cover pan with foil and put it in the freezer for 10 minutes, or until firm.

4. Beat cream cheese in a large mixing bowl for 30 seconds or until softened. Add the whipping cream, 1/4 cup of sugar and the vanilla. Beat on low to medium speed until light and fluffy. Be sure to stop the mixer now and then to scrap down the sides of the bowl.

5. Spoon cream cheese mixture over graham cracker crust; spread evenly. Drain mandarin oranges and arrange on top of cream cheese mixture.

6. Warm preserves in a small saucepan, stirring frequently, until melted. Spoon melted preserves evenly over oranges. Cover pan with foil and refrigerate for at least 6 hours.

7. Loosen the cheesecake with a table knife before removing the springform to serve.
