Cake Mix:
2 c. sugar
1 1/2 c. oil
4 eggs
2 1/3 c. flour
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
2 tsp. vanilla
1 tsp. cinnamon (heaping)
3 c. grated carrots

Icing:
3/4 pkg. (8 oz) cream cheese
3/4 stick or 6 Tbsp. butter
2 tsp. vanilla
Powdered Sugar

Cake mix:
Mix together sugar and oil. Add eggs and mix thoroughly.
Add dry ingredients and vanilla, mix. Add carrots and mix until well blended. Put in sheet cake pan sprayed with Pam. Bake at 350º for 35 minutes or longer.

Icing:
Mix together all ingredients except powdered sugar.
Blend in powdered sugar to make a spreadable icing.
