1 cup flour
1/2 tbsp. salt
1 cup water
3/4 cup coffee cream (half and half)
2 eggs beaten
4 tbsp. butter or margarine melted

Directions:
Sift flour and salt together. Mix water and cream, stir in eggs and blend thoroughly. Gradually add liquid mixture to flour, stirring to blend well. Batter should be the consistency of heavy cream. Strain through a fine sieve (strainer). Let batter rest 3 to 4 hours.

Brush a crepe pan (or 5 or 6 inch frying pan) with a bit of the melted butter over medium heat. Pour 1 tbsp of batter into pan. Quickly lift from heat, tipping to coat entire surface with a thin layer of batter. Brown on one side slightly, turn and brown second side.

*Note: The second side takes only half the time to brown as the first side did.

Repeat procedure brushing pan lightly with melted butter each time.
