Turkey giblets and neck
1/2 C onion chopped
1/2 C celery chopped
2 Tbsp butter or margarine
1 tsp parsley flakes
pork & chicken (Johnny's) seasoning to taste
1/2 tsp garlic powder (maybe a little more)
salt and pepper to taste
A little poultry seasoning if desired
1/2 tsp kitchen bouquet liquid
4 eggs

Directions:
In a large pan cook celery and onion in butter until soft. Add giblets, turkey neck, eggs and seasonings. Cover with water or chicken stock. Bring to a simmer and cook, stirring occasionally until giblets are cooked through, 30 to 45 minutes. Remove giblets, neck and eggs, cool. Make gravy with remaining broth. Use either a flour paste or packaged turkey gravy as a paste for more flavor. Start with 1/2 C dry flour/gravy mix stirring in enough water to make a thin paste to pour into simmering broth. Pour mixture into broth a little at a time, stirring until gravy is the desired consistency. May need to repeat flour/gravy mix portions. Simmer gravy until flavors are combined. Remove meat from neck. chop neck meat and giblets. Stir into gravy. Chop hard cooked eggs and stir into gravy. Once turkey is cooked add drippings from pan to gravy and stir.
*Note- I make the gravy at the same time that I am making dressing for the turkey. So in the first step I am actually cooking twice as much onion and celery in twice as much butter. Then I use half to put into the dressing and half for the gravy.
