2 c all-purpose flour
1/4 c sugar
1 T baking powder
1/2 tsp salt
1 c milk
1 egg, beaten
1/3 c vegetable oil
3/4 c mashed banana
1/2 c chopped walnuts

Directions:
Directions:
Preheat oven to 400º F. Grease a 12 cup muffin pan.
Sift flour, sugar, baking powder and salt into a mixing bowl.
Make a well in center of dry ingredients.
Mix milk, egg, banana and walnuts in another bowl. Pour this mixture into well.
Mix batter until just moist, do not over mix.
Spoon batter into the muffin cups. Bake until a toothpick comes out clean when inserted in center or until they are golden brown, about 15 minutes.
